Spring Orzo (kids favorite)

Ingredients

  • 1 tablespoon butter

  • ½ cup finely chopped shallot

  • 2 cloves garlic, minced

  • Zest of 1 medium lemon

  • 3 cups bone broth

  • salt & pepper to taste

  • 8 ounces whole-wheat orzo

  • 1 cup frozen peas

  • 1 tablespoon lemon juice, plus more if desired

  • Grated Parmesan cheese (Optional)

Method

Heat butter in a large saucepan over medium heat. Add shallot and garlic, stirring, until softened and beginning to brown, about 3 minutes. Add orzo and lemon zest cook, stirring, until brown. Increase heat to high and stir in broth, salt and pepper. Bring to a boil. Adjust heat to maintain a lively simmer. Cook, stirring frequently, until the orzo is tender and the liquid has mostly evaporated, 10 to 12 minutes. Remove from heat and stir in peas and lemon juice. Cover and let stand for 5 minutes before serving. Serve with Parmesan, if desired.
